Pesto potato gnocchi
Ingredients
  • 1 lb of red potatoes
  • 2 ½ cups of flour
  • a pinch of salt
  • 1 egg
  • 1 cup of cherry tomatoes, halved
  • a handful of basil olive oil
  • Salt
  • Pepper
  • ⅓ cup of pesto
  • ⅓ cup of grated parmesan
The Recipe
  1. First, boil the potatoes with skin in salty water. Peel while they are still warm.
  2. Mash them with a potato masher, mix in the flour, egg, and salt and knead until soft and malleable.
  3. Put the dough inside the Handy, press it and with a pair of scissors, cut little pieces.
  4. Boil them in water until they start to float.
  5. In a bowl add the tomatoes, some olive oil, salt, pepper and basil leaves. mix well and reserve.
  6. In a saute pan, heat the olive oil and saute the gnocchi. When they start turning golden brown, transfer them to the tomato bowl. Add the pesto and mix well.

Going through it step-by-step.. 

Step1 - Making the dough

First, boil the potatoes with skin in salty water. Peel while they are still warm.

Step2 - Pillowy Texture

Put the dough inside the Handy, press it and with a pair of scissors, cut little pieces.

Step 3 - Turn the fire on!

Boil them in water until they start to float.

Step 4 - Golden the fritters

In a saute pan, heat the olive oil and saute the gnocchi. When they start turning golden brown, transfer them to the tomato bowl. 

Step 5 - Almost ready..

Add the pesto and mix well.
