Stuffed Avocados with Salmon Devil Eggs



  • 2 avocados
  • 80g smoked salmon
  • 3 egg whites
  • 4 egg yolks
  • Salt
  • Pepper
  • Pink pepper
  • Fresh Thyme



Preheat the oven to 390ºF Cut the avocados in half and remove the lump with the Avocado Slicer. If the hole looks small, take another bite of avocado with the help of a spoon until an egg fits inside. Place the avocado halves over a parchment paper in a baking dish.

Step 2

 Arrange the strips of smoked salmon. Open each egg to a bowl and, with the help of a spoon, place the yolk and as much clearing as you can inside each half of avocado.

Step 3

Season each egg yolk with salt and black pepper. Carefully place the pan in the oven and cook for 15 to 20 minutes. At the end, spread the red pepper and fresh thyme over each avocado.
