Quinoa & Zucchini Salad With Tahini Dressing

  • 1 can chickpeas drained and washed 
  • 1 lemon zest and juice 
  • salt; to taste 
  • pepper; to taste 
  • 1/2 cup quinoa 
  • 1/2 Zucchini 
  • 2 tbsp pistachios; chopped 
  • 1/4 cup sesame tahini 
  • 1/4 cup fresh lime juice 
  • 1 tbsp agave 
  • 1/2 cup fresh mint 

Step-By-Step Instructions:

1.  In a bowl, combine chickpeas, lemon zest, lemon juice, pinch of salt and pepper. Refrigerate for 20 minutes. 

2.  Cook the quinoa: ½ cup quinoa to 1 cup of water. Season with salt. 

3.  Blend (use MILK FROTHER PRO) the tahini, lime juice, agave, mint, ¼ cup water and a pinch of salt, adding additional water if needed. Set aside. 

4.  With a vegetable peeler, shave the zucchini.

5.  In a bowl, combine quinoa, zucchini ribbons and marinated chickpeas, Sprinkle with pistachios (use PROFESSIONAL MEASURING SPOON) and drizzle with the dressing.
