Key Lime Pie

  • 2 1/2 cups of plain flour 
  • 2 tbsp of sugar 
  • 1/2 tsp of salt 
  • 1 cup of butter 
  • 6 tbsp of cold water 
  • 2 tbsp of lime zest 
  • 2 tbsp of lemon zest
  • 2 tbsp of Orange zest 
  • 4 eggs 
  • 1 can of condensed milk 
  • ½ cup of lime juice 
  • 2 tbsp of lime zest

Step-By-Step Instructions:

1.  In a kitchen robot blend the flour and butter together until even.
2.  Add the salt and water and mix until it has a coarse sand look.
3.  In a floured surface, knead the dough with the citrus zests until it is mold able and form ball. Wrap it in clinging film and refrigerate for one hour.
4. In a big bowl, whisk the eggs until they turn pale yellow.
5. Add the condensed milk slowly while whisking.
6. Add the lime juice and mix again.
7. Roll out the dough and cut the circles using the Pie Maker cutters.
8. In a greased cupcake baking tray, line the holes with whole circles of dough, stuff with the lime mix and top with the decorated circles. Press the edges to close it well.
9. Bake at 375º F for about 15 minutes.
