Ice Cream Popcorn Burger

Ice Cream Popcorn Burger

  • ½ cup kernels
  • 2 cups ice cream of your choice
  • Dark Chocolate
  • 1 cup peanuts salted, roasted
  • 12 cups popped popcorn
  • 1 cup brown sugar
  • 2/3 cup agave syrup
  • 3 tbsp butter
  • 1 1/2 tsp vanilla extract

Step 1

Line a large baking sheet with parchment paper and spray with cooking spray; set aside. Make 100 g of popcorn with the PowerLix Microwave Popcorn Maker.

Step 2

To make caramel popcorn, melt butter, brown sugar, agave and vanilla in a large saucepan set over medium-low heat. Remove from heat. Stir in popcorn until well coated; cool slightly.

Step 3

With slightly damp hands, shape about ⅓ cup of popcorn mixture into a ball. Place on prepared pan, pressing gently to form a cookie shape. Repeat with remaining mixture to make 12 cookies.

Step 4

Freeze for 15 to 20 minutes or until set. Sandwich a ⅓ cup scoop of ice cream between two cookies.

Step 5

Freeze until ice cream is firm. Then dip the wafer in dark chocolate. Top with salted peanuts and again freeze.
