Cheesy Guacamole Poutine
INGREDIENTS:
- 2 lb of french fries
- 1 cup of shredded cheddar cheese
- ½ cup of shredded mozzarella
- 1 tbsp of butter
- ½ cup of Milk
- 1 tsp of dried oregano
- 2 ripe avocados
- ½ cup of sour cream
- 1 lime, juice and zest
- ⅓ cup of chopped red bell pepper
- ⅓ cup of chopped green bell pepper
- 1 small diced red onion
- 1 cup of cherry tomatos, halved
- 1 tbsp of chopped cilantro
- ½ tsp of chopped dried chilli
- 1 tbsp of olive oil
- A pinch of salt
- ½ tbsp of smoked paprika
- Frying oil

INSTRUCTIONS:
Step 1
Place the avocado on a processor, add the creme fraiche, drizzle with the lime juice, season with salt and pepper and crush until obtaining a homogeneous consistency. Pour into a bowl and add coriander, purple onion, green and red pepper and drizzle with olive oil. Mix and set aside.
Step 2
Fry the potatoes in plenty of hot oil, drain them on absorbent paper and set aside.
Step 3
In a saucepan melt the butter together with the cheddar cheese, the mozzarella cheese and the milk. Sprinkle with smoked paprika and pour over the chips.
Step 4
Finalize with the guacamole sauce you reserved, add the cherry tomatoes and sprinkle with the chopped chilli.
