Asian Shepherd's Pie

Ingredients:

  • Coconut oil – 2 tbsp
  • Chopped onion – 1/3 cup
  • Chopped garlic – 2 cloves
  • Coriander seeds – ½ tbsp
  • Ground fresh ginger – 1 tbsp
  • Soy sauce – 1/3 cup
  • Ground beef – 4 cups
  • Salt – a pinch
  • Black pepper – a pinch
  • Sliced Bell Pepper – 1/3 cup
  • Shredded carrot – 1 cup
  • Coconut milk – 1 cup
  • Beef stock – 2 cups
  • Peas – 1 cup
  • Red Chili – 1
  • Chopped cilantro – 1 tbsp
  • Puff pastry
  • 1 egg yolk

Step-By-Step Instructions:

1.  In a large pot, heat up the coconut oil and add the onions and coriander seeds. Let it Brown for one minute or two and add the ginger, chili and garlic. Let it cook for another two minutes.
2. Add the soy sauce and let it evaporate for one minute.
3. Add the beef, salt, pepper, carrots and bell peppers and cook until the beef is cooked through.
4. Add the stock, coconut milk and let it bring to a boil.
5. Add the peas and let the stock reduce and the peas get soft
6. Cut the dough into circles and stuff with the beef. Brush the edges with the egg yolk and close it well.
7. Bake at 400º F for about 20 minutes.
